It was a passion that grew because it was nurtured and encouraged by her mom. And that love for flowers was a seed that she also planted in her own daughters' lives.
"The girls, they love putting flower arrangements together. And it's a way that, like, we would spend quality time together and with my mom. And that was just our gesture of love. And we would bring flowers over to her," Lindsay said.
But in July, everything changed.
"My girls, my husband and I were on a family vacation that we haven't gone on in two years," Lindsay said. "And my mom was staying here at the house. And unexpectedly, she passed away."
When planning her mom's funeral service, Lindsay knew that she and her daughters, Kennedy and London, wanted to put together the floral arrangements. While they were working, they began reminiscing about things Mimi wanted for them. Mimi recognized that the three of them together had a very special gift when it came to crafting floral arrangements.
"And then when my mom would always say, you guys should start a business, you should do this, you know, you're good. You love doing it," Lindsay said.
Until then, they had always found a reason why not. But now, there was a reason why.
"And, you know, life gets in the way, and life is busy," said Lindsay. "And when my mom passed away and we were doing all the arrangements for the service, it really hit us, like, this is why what our hearts are telling us to do."
So they got to work creating "Mimi's Handcrafted Bouquets."
"Maybe a week ago, we started like actually doing that and, like, believing that it could actually happen. So that's kind of how like it started," said sixth-grade student Kennedy Riggenbach.
She also designed the logo.
"I was like, OK, let's get on Canva. Because, like, Canva's everything," she said with a laugh. "And I was, like, typing it, like, flower logo. And I found this one and I was like, oh my gosh, that's so pretty. We added like our own personal touches."
Those personal touches included Mimi's favorite color blue because of her love for the beach and the ocean.
They're hopeful that their dream of opening a flower shop in Mimi's memory will one day blossom into reality. Up until now, they've been starting small: delivering their bouquets made with love to teachers for the first day of school this week.
Lindsay hopes "Mimi's Handcrafted Bouquets" are not just a labor of love and a lesson in entrepreneurship for her girls, but also a reminder of one of life's most important lessons.
"I think more people need to really just stop, smell the roses," Lindsay said. "And take time and spend quality time. I think, you know, in this day and age, everybody's so rushed. And do what makes you happy. Do what brings you joy and love."
