CAPE CORAL, Fla. (WINK) — In Southwest Florida’s growing dining scene, Prime 239 Steakhouse in Cape Coral is carving out a name for itself by focusing on one thing: quality you can taste.
From hand-selected cuts of beef to an elevated steakhouse atmosphere, the restaurant leans into a classic philosophy, that great steak starts long before it ever hits the grill.
At its core, Prime 239 is committed to sourcing high-quality beef and preparing it with precision.
The steakhouse works with top-tier cuts from specialty suppliers and local butchers, emphasizing that the foundation of every dish begins with the ingredients themselves.
The menu reflects that focus. Guests can choose from a range of steaks, including filet mignon, New York strip and ribeye, along with standout options like the signature 40-ounce Tomahawk Ribeye.
Some of the steaks even come with birth certificates. For Executive Chef Matt Djerf, he makes sure to get the best steak.
"We only add salt to our steak. It doesn't need anything else. That's how good it is."
But beyond the menu, it is the preparation process that sets the tone for the experience.
While Prime 239 highlights premium sourcing, steakhouses like it often build their reputation through techniques like dry aging, a process widely considered the gold standard for enhancing flavor and tenderness.
Dry aging involves storing beef in a controlled environment for several weeks, allowing natural enzymes to break down muscle tissue while moisture evaporates. The result is a steak with a more concentrated, rich flavor and a noticeably tender texture.
In comparable Southwest Florida steakhouses, dry-aging programs typically range from about three to four weeks, a timeframe that deepens flavor without overpowering the meat’s natural profile.
Owner of Prime 239 Steakhouse, George Lukas, believes this is a game-changer for Cape Coral.
"No one else is doing what we're doing. Dry aging steak is like a science," he said.
That process requires strict control of temperature, humidity, and airflow, making it both labor-intensive and costly. But for steak lovers, the payoff is undeniable: a deeper, almost buttery flavor that sets it apart from traditional cuts.
At Prime 239, the experience goes beyond beef. The menu blends classic steakhouse staples with modern touches, offering seafood, handcrafted appetizers, and chef-driven dishes that bring a contemporary edge to the table.
Owner Lukas says he created a place that people can dress up for.
"I want this to be a place people can look forward to going to, and they can put on their best outfits. It's an old western theme and makes you feel like you've been transported somewhere else, away from Cape Coral," he said.
Dishes like lobster bisque, beef tartare, and seafood entrées round out the menu, giving diners options whether they are celebrating a special occasion or simply enjoying a night out.
As Cape Coral continues to expand its culinary footprint, Prime 239 is positioning itself as a destination for those looking for an upscale steakhouse experience without leaving the region.
With its emphasis on high-quality beef, careful preparation, and a nod to techniques like dry aging, the restaurant is tapping into what steakhouse dining is all about: simple ingredients, elevated through time, technique, and attention to detail.
Because at the end of the day, great steak isn’t just cooked it’s crafted.
