NORTH FORT MYERS, Fla. — Sandwich lovers in Southwest Florida have a new way to enjoy a classic lunch.
Chop It Up Sandwiches is putting its own spin on the traditional sandwich by chopping the meats, cheeses and toppings together before piling everything onto bread, a tortilla or a salad. The result is a every bite is packed with all of the flavors at once.

The business is owned by Evan Cassell and Corrina Hohl, who moved from the Midwest to Southwest Florida to pursue their dream of building a business together. The couple first operated Chop It Up as a food trailer before opening their first brick-and-mortar location in North Fort Myers in January 2026.
Today, the restaurant is located at 1001 Palm Ave. in North Fort Myers, " What I like most about this space is that with the food truck people would take their food and go. Now, people can get their food and have somewhere to enjoy it,' said Hohl.
The menu features several signature sandwiches, including the Chicago Style Italian, made with ham, pepperoni, salami, provolone, hot peppers, lettuce, tomato, pickles, onion, oil and vinegar, Italian seasoning and mayo, " This is our most popular sandwich" said Cassell.
Other popular options include The Crunchwich, with turkey, ham, bacon, sharp cheddar, tomato, lettuce, pickled red onions and chipotle aioli, along with the Blazin' Chicken, Basil Pesto and The Hoosier, an ode to Indiana University.
For those looking for something lighter, Chop It Up also offers salads, wraps and build-your-own options. The menu also includes sides like macaroni salad, pasta salad, chicken salad and homemade banana pudding and they are constantly changing things up
The restaurant's drink menu goes beyond the typical soda selection, with Cuban cold brew and caffeinated refreshers in flavors like Coconut Dream, Berry Mocha and Tropical Blue.
Chop It Up also has deep roots in the Southwest Florida community. The food trailer has served customers at local events and worked with businesses and organizations including the Boston Red Sox at JetBlue Park and Fort Myers Brewing Company, so you might catch them on the road.
At its core, the business is about more than sandwiches. Cassell and Hohl describe Chop It Up as a Christian-based company built around faith, hope and charity, with a goal of creating relationships and making a positive impact in the community, " We want to serve the community anyway that we can,"said Hohl.
Whether you're looking for a loaded Italian sandwich, a chopped chicken wrap or a sweet finish with banana pudding, Chop It Up offers a different take on a familiar lunch favorite.
